Part of maximizing your earn is minimizing your loss in awkward spots. Spewing off half of your stack or more with A high isn't likely profitable against a fish like this. I think you can check the flop here for pot control. Just make sure you check the flop sometimes when hitting your hand too.. if you think he actually will remember any of your plays in future hands. If not, value city him.
