In retrospect, I really dont think someone this nitty has many suited hands in his range here. L/c from EP should be a PP most of the time for him right? Should I just fold flop then?

i would actually rephrase this to "everything is worse than folding after he check raises"

The worst i think an 11/6 will show up with after the c/r is a gutter+FD and youre still not in great shape equity wise against that.

I don't really hate the c-bet for a few reasons:
1. we'll just end up playing the guessing game on later streets if he decides to ramp up the aggression
2. since we can't really turn any equity without an A or 7 I dont think he'll make second best hands often enough to pay us off when we're ahead
3. too many scare cards can hit the board.

This is one of those spots I either wanna take it down or get out against resistance.

Yeah, the more I think about it, the more I realise I wasnt adjusting at all to this particular player in this hand, just thinking generic ranges.

why doesnt anyone bet/fold one pair hands with no backdoor equity on the flop anymore

Yeah, definite fold on the flop against this player. I doubt checking behind on the flop is better than betting against these types, but it depends on how he plays later streets in these kinds of situations. Bet / fold is probably best.
