Two weeks should be fairly easy as long as you do some research first. Buy lots of groceries and look up lots of recipes. Make sure you have a lot of variety. Many people think being a vegan/vegetarian is nothing but salads and shit (yes feces), but it's much more than that. My wife became a veg a few months back, and since then I've started eating much less meat as well. I still enjoy me a nice big steak but most of our dinners are meat free. And I don't really miss the meat all that much, it's actually introduced me to a wider range of prepared foods. So at the very least, you will be discover some new tasty foods that you might have otherwise avoided.
I've looked into both sides, You will find tons of people who say you will become deficient without eating meat and you will find others that say removing meat is one of the healthiest things you can do. I say it depends. Of course if you eat nothing but carrots and celery, you're going to have problems. But there are many non-meat products you can consume to avoid any deficiencies.
The biggest problem I have with meat is the time it takes to digest. It has to be broken down and takes much longer to go from steak on the grill to stool in the toilet comapred to any fruit, veg, plant, etc. Some people never have an issue with this, but it does effect many people, including myself. I found myself feeling better after cutting down the amount of meat I was consuming. Less stomach pains, less cramps, less rotten farts (which actually may be a con), etc. There have been studies comparing our intestines to other carnivores and herbivores, and from what I've heard, our small-large structure is more like many herbivores.
Be prepared to have to shit a lot more often because everything will be broken down much faster. On average, I shit about 3-4 times per day now vs 1-2 when I was a carnivore.
I suggest buying a juicer and blender if you don't have one already. One of the best things I have for breakfast (or anytime really) is fresh juice blended with fresh fruit. My fav right now has been to juice a couple oranges and a lemon, then toss it in the blender with some strawberries, blueberries and a banana. You can substitute anything for anything, it's near impossible to make it taste bad.
