nice catch on the short rib pasta, the dish was supposed to be a mini lasagna. we test ran the dish with fresh pasta and it worked great. at the time of the dinner we could not get any fresh pasta and tried dry pasta. we had to change the dish as we were plating, the dry was just to thick and tough for doing mini lasagna. the dry pasta would have looked nice as lasagna but would just been a dissapointment when eaten.

probably no cognac tasting in the future. more champagne most likely.
