Trimbach Riesling is very nice. Good choice sir!

Not so sure about the Guinness in a can though...(ever had Guinness and oysters?)

I have been trying to make my own sushi with varying degrees of success.

I saw you made a spicy tuna roll. I just used sriracha (which is the shit in general) for the spicy part. Yours looked different, what did you use? Did you add spicy mayo?

    BTW, some serious baller spreads.

if anyone is interested, i learned this very simple and very good way to enhance a BLT. just mince some cilantro and squeeze some lemon juice to the mayo!

wilburforce how did the ridge go down?

    another ipa/pale ale tasting
a homebrewer buddy and his gf joined us(both much more experienced than my wife and i at beer tasting)
it was good to have some professionals with us

    the line up

buddy's home brew was the beeer on the far left

the least liked 3 beers of our tasting
    long trail
    smutty nose
    and ipswich

the oddball---some liked , some didn't know what to say
    dogfish

    4th place
    buddy's home brew

    3rd place
    rock art

    tied for 1st
    dale's and stone
  10. #85
Love IPAs, only had the dale's, stone, dogfish head and long trail. Love the Dale's and Stone, like the other two. Dogfish head beers can be a little too sweet/malty for my taste, but that's a bigger problem with the 60- and 90-minute IPAs in my experience.
  11. #86
yeah, the ridge was v good. expensive over here, so i prob won't get again untill 4th of July next year!

I did have a very nice Medoc last night - went well with spicy Italian sausage and mushroom pasta

Been getting into my Port lately (Christ I'm getting old). Highly recommend you have a Port/Maidera tasting. Served with cheese and grapes mmmmmmmmmmnnnmmmm

cascade hops are considered the phil collins of hops

Hey Flomo - I had some red wine the other day that was unbelievably good. I'd never heard of it - someone brought me back a bottle from Southern Italy.

Its called Aglianico del Vulture - and after some quick research it is one of the wine world best kept secrets.

It can be as good as Barolos but for 1/2 the price.

I've found a supplier in England (Majestic do a bottle) - I'd seriously recommend finding a bottle. Its only about £7 ($10) a bottle, but tastes like it is £30 - and it can be laid down for years.

I'm gonna be drinking a lot of this stuff!!!

Hendrick's gin is available here but i have yet to try it. Bulldog gin i have never heard of before now.

Lately i've been mixing cocktails and using beefeater and tanq for my gins.

i don't remember what the mumm was like other than we all thought it was good for the price. 4 of us drank all 7 bottles that night, and we only took notes on the champagne.

It might be difficult to come by for others but if you are in Canada there is a micro brewery here in Manitoba that makes a few different types of beer. My fav so far:
Stir Stick Stout. It is a dark stout w/ some ethiopian coffee infused within, really good stuff.

I am a big fan of scotch although the price keeps climbing...
My favorite is 16yr Lagavulin (tastes like pure smoke) with Ardbeg and Laphroiag coming in second...

My wine choices are always red and must be bold like Cabernet Sauvingnon or Chilean Malbec...etc...I like it with red meat and also with dark chocolate (85%+)...

nice catch on the short rib pasta, the dish was supposed to be a mini lasagna. we test ran the dish with fresh pasta and it worked great. at the time of the dinner we could not get any fresh pasta and tried dry pasta. we had to change the dish as we were plating, the dry was just to thick and tough for doing mini lasagna. the dry pasta would have looked nice as lasagna but would just been a dissapointment when eaten.

probably no cognac tasting in the future. more champagne most likely.

i had the "joy of mixology" by gary regan open to make a pegu club cocktail, then noticed the oriental on the opposite page. the original old times recipe for the oriental coktail was made with rye for the whiskey and orange curacao fjor the cointreau. i followed the books recipe and was very impressed with the cocktail.

if you like crisp bracing cocktails(i do), this a great one
    the pegu club cocktail
    2 oz gin
    1 oz cointreau
    .5 oz fresh lime juice
angostrura bitter to taste(3 dashes for me)
orange bitters to taste(3 dashes for me)
shake with ice, strain and serve up

been drinking a lot of negroni's recently, really good, especially if you enjoy slightly bitter cocktails. i've been enjoying them pre-dinner and then switching to manhattans after.

this is a great website for cocktail recipes and stories, guy is making every cocktail in the Savoy Cocktail Book:

thank you, been wondering what happened

i've been following erik on Egullet, no posts lately in his savoy stomping(and they had stickied his recaps for each letter--they a;re nolonger stickied)--he is still stomping along just not posting it on egullet.

    Egullets cocktail forum is excellent.

Vieux Carre is one of my favorite aromatic style cocktails, zook i think you would love it, if you aren't already loving it.

I'v emade my first ever batch of Sloe Gin - check it out if you don't know what it is: http://www.sloe.biz/pip/

I've made 6 litres of the stuff....

When its done you then use the gin soaked sloes (basically small, sour plums for the blackthorn) to make Shlerry - Sloe Sherry, then when this is done, you make Shlider - Sloe Cider.

This looks to be a very drunken year for Wilbur.

Depending how many bottles i've got and whether the sloe gin is any good I was thinking about a FTR Pstars game where I ship the winner a bottle...could customise it with a FTR label...anyone interested?

I'll maybe put some pics up if i can.

good thread, i think we should start another one just for wines!!

gonna grab a bottle of Aglianico next time i visit the liquor store. From what I can see we don't have many choices here in Quebec, just like 2 kinds that are 20$, rest are 60$++

rum is a sweet booze that you might just not like.

Here's a list of some "top shelf" white rums tho:

    http://nymag.com/nymetro/shopping/co...esearch/11948/

I only use rum as a mixer (mojitos, daiquiris, cuba libres) so I don't really care if I use rotgut or not.
