I feel like I gave it a chance. I logged something like 5-6 hours, and spent every minute frustrated and disappointed.

How long does it take to "really start playing the game"?

Depends how you go about it you can literally spend tens of hours doing nothing or any real relevance. It's one reason why I don't like such open world RPGs. Like with most long forms of media they can seem a little impenetrable at first.
