Major orchestras have performed a lot of the FF music across the board. There's the Distant Worlds concerts, Tour de Japan (check this out, so beautiful), plus more. http://en.wikipedia.org/wiki/Final_Fantasy_concerts
I love orchestrated version of video game music in general. John Williams doing Ocarina of Time was so fucking cool. (speaking of, Koji Kondo, also brilliant)
I think FF9 is the richest soundtrack on the whole. It helps that "You Are Not Alone," "Vamo' Alla Flamenco," "Roses of May," "Bran Bal, the Soulless Village," just to name a few, are just like... breathtaking. I think FF6 comes in second for me. ff9 is apparently Nobuo's favorite of his own work, which gives me an air of superiority about my opinion Have you listened to the Final Fantasy piano collections? They are really dope reimaginings of the songs. "You Are Not Alone" becomes this like, sassy jazz fare, and "Bran Bal" becomes a little more robotic and atonal. They're all on youtube.
I think One-Winged Angel is a good song but I was never as enthralled by it as everyone else, I guess because I know what I expect from Uematsu at his best, and it's not close to what he's really capable of.
I didn't know that about Mitsuda, that sounds a lot like how I would be in that situation.
aww this is adorable... via wiki:
"After Mitsuda contracted stomach ulcers, regular Final Fantasy series composer Nobuo Uematsu joined the project to compose ten songs and finish the score."
I remember when I first heard the 600 AD theme, completely immobilized me for a minute there.
