There can be 4 cards to the flush on the turn and she will still call with just a pair. I just bet the minimum amount if I catch something and check her down if she calls it. I chip away at her stack like this until she is no longer a threat to me. It takes a while but I would rather win several small pots than lose one big one to an underdog on the river.
I would also suggest playing her heads-up at home to spot tells in her game.

That sounds exactly like her. There can be a four to a straight flush on the board and a pair of twos and if she has two pair (the twos and a match on another card, she thinks she has a strong hand. I'll try that approach. And playing heads up with her won't help spot her tells. She does the exact same thing on every hand she gets. She looks at the cards, glances at the faces of the other players, looks at the money in front of her, then looks to the person that is acting. I have looked and looked for deviations from this and I just cannot get a read on her. Well except one. When she fold to my bets, she has lousy cards.
