HUD (heads-up display) is a part of pokertracker (or other similar software) that keeps track of statistics that describe your opponents' play - there is a HUGE number of statistics that it can do for you and you could spend forever customizing it, but some common examples you might see are VP$IP (the % of the time this player puts money in preflop either by limping or raising), PFR (just the % of time this player raises preflop), and flop c-bet frequency (the % of time this player continuation bets the flop). Your HUD calculates these statistics for you for each player at your table based on the hands you've played with them, and then displays them so that you can use them to get reads on your opponents and decide how you should play.
