I just got schooled on this the other day, but if you do a search before you post something, you might find what you are looking for.

Anyway, just take notes to match yourself. Learn abbreviations for different styles of play (LAGG, SLAGG, TAGG, etc), and try to note important plays and interesting hands. You don't have to note everything they do.

If you want to be a serious player, then I would suggest PokerTracker. It is a database that uses handhistories from your games to create statistics on your play, and everyone elses. If you don't want to get really serious, you can download it for free and you get 1000 hands. You can see how it works, and maybe get a better idea on how to take player notes.

I focus on the better players.

Fish come and go and I can generally peg them after very few hands then will likely never see them again.

I would agree with that. You are more likely to run into good players than fish in future tournaments so you should focus on note taking with them. That way you can be more specific with notes like - folds to pressure early, understands push/fold mode, etc.
Poker is easy, it's winning at poker that's hard.
