This is precisely the reason that I check the turn. There are basically 2 lines on stars for playing a set. The most prominant is the 1st you mentioned. The second most common is a min-reraise on flop and a pot sized bet on turn.

Nonetheless, I brought this up, because I've been contemplating a new line. I have a couple of ideas, but I wanted everyone elses input. Sounds like most people play this situation just like me.
