600 NL seems to be the consistent chatter of when it gets difficult. I think you can always find tight,good players at any stake. It has a lot to do with their bankrolls.

As for whether you want a challenge or easy money, it matters what you're playing poker for. I personally play so I don't have to work at subway part time (genreal example) while at college. I like easy money, that's why I play.
