On poker shows, they derive the percentages because they know each player's hole cards and such, and can calculate the likelihood of each hand ending up a winner in a straightforward manner.
You will "incorporate these percentages into your game" by putting your villain on a range of hands (and not just a single hand) and then calculating the equity your hand has against that range. Knowing our equity against a range may help us make some reactionary decisions, like whether to call an all-in (see spoon's links) for example.
How we go about putting our opponent on a range and how we use this information is another matter entirely, and probably more essential to our play in general.
I would suggest buying and reading Theory of Poker by David Sklansky before going much further. If you get through that without much trouble, get No Limit Hold'Em Theory and Practise by the same author. Take lots of notes.
