I started out at a local community college. I have two different two-year degrees, one in is an A.A. for English and one is an A.S. for Mathematics. I then transferred to the University of North Carolina at Greensboro to work on a B.S. for Applied Mathematics, and while I finished most of my coursework, I had some pretty crazy life circumstances that didn't allow me to finish my degree. Also, my favorite professor died, and that kind of pushed me away from it emotionally. I plan on finishing that up sometime in the next couple of years.Quote:

I was actually in the middle of typing this one up. To answer your questions, I think it's definitely worth making, but it can take a couple of tries before you figure out what you like. I answer the storage question in the below. Depending on how you store it, you can get it to keep for several weeks at a minimum. Also, with jerky, the difference in the taste between beef and deer is practically zero. So much of the taste comes from your marinade that my family and friends can't tell a difference 9 times out of 10, and that's saying a lot since we eat a ton of deer.Quote:

Cheap sirloin steaks are a good place to start. You want as little fat as you can get because the fat will go bad very quickly. Some places have London broils for a cheap rate, and you can cut those up if it's cheaper on you.
In general, there are two basic ways that you can cut your meat. You can go with thin strips about 1/4" by 1/4", or you can go with wider strips that are like 1-1.5" by 1/8". If you want to make smaller pieces that are easy to eat as snacks, go with the 1/4" by 1/4". If you want your jerky to look more traditional, then go with the wider strips.
A lot of people suggest cutting with the grain. I actually prefer cutting against the grain because that makes the end product easier to pull apart.
Step 2: Marinate it for however long.
For the marinades, there are just tons of different ways you can do it. If you want something that tastes fairly plain without being spicy or hot at all, a good starting point is 2 cups/10 oz of soy sauce with 1 tsp of brown sugar. If you want a little more flavor, you can go with something like 1 cup soy sauce, 1 cup Worcestershire sauce, 1 tsp liquid smoke. You can play with chili powder, chipotle powder and paprika if you like it hot. I've also used 2 parts balsamic vinegar with 1 part soy sauce with some onion powder and it's turned out great. You can look up a lot of marinade ideas online, but the soy sauce is really the basis of all of it. Also, store-bought marinades are mostly crap and generally defeat the purpose when people want to avoid shoving 48494 random chemicals down their throats.
As for how long to marinate, about 12 hours is sufficient. I've done it as little as 6 hours and as long as 18 hours without noticing much of a difference when compared to 8-12 hours.
Step 3: Dehydrate it for however long.
There are basically three ways to dehydrate. The easiest is to just put the shit in a regular dehydrator, and this is what I do. However, some people think that using a dehydrator that uses heat changes the flavor of the meat, and they would prefer to use cool air instead. To this end, you can build a cheap dehydrator using a fan and some racks for somewhere in the $30 range. I've done this before, and it takes a lot longer with a lot less consistent result in my experience.
A third method is to dehydrate in an oven. Basically, you hang the meat on toothpicks on the oven racks with a pan to catch the drippings under it, or you just lay it across the racks. Then you put the oven on a low setting (like 150-200 degrees), and you prop it open with a wooden spoon to let the moisture out. The idea is to dehydrate the meat instead of just cooking it. My dad prefers this method, and it takes just about as long.
For those of you who will be using a regular food dehydrator like I do, I can't recommend a specific time frame because different dehydrators work at drastically different paces. What I can tell you is that if it's squishy, it's not ready yet. If you can bend it while it cracks a lot without breaking in half, then it should be ready. If bending it causes it to just break in half, then it's probably been in there too long.
Step 4: Store it.
Don't eat it as soon as it's ready or it will taste weird because it's still warm. You need to let it cool off for a bit. If you're going to be storing it short-term, then small plastic bags like zip-loc bags are fine. If you're going to be storing it for the long-term, then you'll want something like a plastic canister that won't collect as much moisture. From what I've read and experienced, the jerky collects moisture mostly based on how much of its surface area is touching the plastic. A lot of it touches in bags, but not as much touches in vertical storage containers.
There is a ton about this online as well.

People who make false rape accusations are very rarely charged in the United States. The main reason for this is that there is a lot of political pressure for prosecutors not to. Modern feminists claim that going after people who clearly admit to making false rape accusations will make real victims scared to come forward. I'm of the opinion that it would have the opposite effect.
Now what's so really fucked up about it is that modern feminism insists that "rape" cases like the three hypothetical scenarios above are on the same level of rape as something like the Steubenville case with the football players and whatever.
Some people don't think that cases like this happen, but they happen all the time.
Quick example, though it's really easy to find tons of other examples like it. In 2009, a handful of guys gang-banged a chick at Hofstra University. Her boyfriend found out about it, and she cried rape to keep from looking like she just decided to get gang-banged by a group of guys she had just met (which was the case). She stuck by her story, and four men were very close to being sent to prison over it and having their lives ruined just because she said so. Part of the gang-bang was caught on video from another guy's cell phone, and he decided to come forward. It showed a much different scenario than what the girl said happened, and then she confessed that she made it all up to keep her boyfriend from finding out that she got gang-banged by four or five strangers for fun on a whim. The prosecutor refused to press charges against the chick.
So this has become longer than I meant for it to, but the rape law situation is something that I think all men from the US should know about. Right now, there isn't really any legal avenue that men can take. The two main reasons, other than third-wave feminist horse shit rhetoric, that stuff like this isn't getting taken seriously are:
1. So-called "men's rights activists" (MRAs) are mostly complete idiots who sit around making "lol get back in the kitchen" jokes.
2. It sounds too ridiculous to be true.

If I had to personally pick a "social issue" that I would attack, it would be education. I would cut into the military budget (which accounts for ~40% of the worldwide military budgets combined) and pay teachers substantially more.

Trip report cliffs notes: Jerky came out good, really not all that hard to make, and as with pretty much anything you do more than once, there are improvements to be made. Some should have been obvious; some not so much.Quote:

Some notes about the marinade: I probably could have used more but I'm cheap, and I used regular soy sauce though in the future I will probably use reduced sodium. This is saying something because I usually try to avoid reduced-fat or reduced-sodium anything, and bacon should be made from pigs.. but I digress. The end product was tasty but a bit too salty for my liking.
The meat marinated for roughly 4 hours, then I put the meat directly on the oven rack with a foil lined baking sheet underneath. Due to the amateur cuts of meat, most of the pieces only made contact with 1 or 2 spokes, probably not ideal, and in the future I will do my best to make better cuts and/or hang them from toothpicks as recommended.
I set the oven to between warm-200, say 175, and propped open the door ever so slightly with a spoon. Pro tip: real men use metal spoons, not wooden spoons, for this type of endeavor. I checked back somewhat frequently and began eating some of the smaller pieces after about 4 hours. Most I let go for 6-7. In my estimation this amount could probably be cut in half or possibly more depending on the efficacy of the earlier steps.
All things considered I am very happy with how it turned out. I have always liked jerky except for the price and additives of most mass produced jerky, this came out tasty, and there is utility that is kind of unique to jerky.

I used to live in Raleigh which is about two hours west of here down I-40. I drove down to visit some friends and have pizza one weekend, and I was driving back Sunday night. I apparently had food poisoning or something because I randomly started throwing up in five lanes of heavy traffic. I threw up hard, or tried to, like every 10 minutes. Though I tried to wipe it up the best I could before I got home, the shit was in the floorboard, on the dash, some of it on the window, on the steering wheel, all that shit. I was sitting on the side of the highway just like convulsing from my body trying to throw up, but couldn't. I guess I had thrown up everything I could. I eventually got home and felt better by lunch time the next day. Cleaning up that car was absolutely disgusting.

That's not that I say that I disagree with Spoon, he is definitely right on a lot of his points, and given that false accusations can ruin mens' lives, they should be treated as such. I am trying to look at more of a macro level here.
- PMS and childbirth. No need to go into the emotional and physical hilarity here.
- Women take on the risk of pregnancy and are more likely to contract STDs during sex.
- Men are usually bigger, and nearly always faster and stronger. This has certain uses in athletics, general life (carrying stuff, moving, yard work etc.), and for reasons of self protection. Women travel in pairs or packs for a reason.
- Men who sleep with a lot of women tend not to be looked down on and are often praised. The reverse is definitely not true. Actually the 'number' topic comes up on occasion (never from me.) I have noticed that with my female friends and past girlfriends, the number is almost always lower than it is with my male friends, and by a significant amount. Things that make you go hmmm...
- Food wise men have it easier. This largely comes from my fitness side, I just have noticed that all things considered, men can usually get away with being more liberal with their food intake and activity that goes beyond scaling for bodyweight. Probably some combination of the general societal attitude discouraging women from training hard/with heavy weights, emotional eating that comes with fluctuating hormones, the high priority of looks for women, and the fairly narrow range that is healthy, attractive, and socially acceptable from both ends of the spectrum (and yes that body does exist, so stop using the notion that it doesn't to excuse being fat.)
- One thing I have often heard is that it's better to be female because they often get hit on and they can get laid whenever they want. In practice I am not so sure that this is a good thing. Past a certain point it is annoying, and all things considered there just isn't a tremendous amount of desireable men out there (from a woman's POV, this is another topic entirely.) Actually I can't imagine what it is like for a somewhat attractive female, when seemingly every bum, creeper, and dirty old man views you as a sexual object and hits on you relentlessly.
That gets into the 'how we age' thing as well. Somebody else can spell that one out if needed-- I suspect that it won't be.
This isn't even getting into work environments, or any number of other situations. There is still a ton to add to the above. Maybe donkbee or chelle can chime in.
There are some caveats of course. Rather than type them out, I would rather just defer to Spoon and Renton's posts. Hopefully they add more as well.
Two things I will definitely conceed, short guys can have it pretty rough, and lazy guys have it pretty rough (lazy attractive woman in comparison can get by comparatively easy.) In that sense maybe it is a lower floor, higher ceiling type of thing
And there really isn't any motivation here. It's not meant as a feminist post or anything like that. Like I mentioned before, I'm just calling it like I see it, and that is certainly influenced by my personal experiences and what not. Apologies for anywhere I stepped over the line, or as the case may be, gave an accurate reality check.
Yeah my argument about women having it better than men in poor countries is kind of specious considering how terrible women have it in the middle east and india and other places. The point I was trying to make, to put it respectfully, is that women have default inherent economic value that men don't have.

It is a pretty complex topic. Typically the ratio of boys to girls at birth is about 1.05:1. As you go further along the spectrum that tends to shift and by later age groups, women invariably outnumber men. I'm aware of that, but if we are taking about peoples looks helping them in life then we can't really allow the slight sway of women outliving men once they both get to around 70 making any real difference in this argument.

I just think that all things considered like social stigmas, pms, child bearing, physical safety, etc. etc. women in general just have more to worry about and more that could go wrong you could say. well this is the women and jerky thread, and I probably need to boost my man cred back up by talking more about jerky.
I made another batch starting yesterday. This time I just had a lot of food, and lots of parties and social events came together and had a couple packs of thin sliced pork chops that were going to go in the freezer, but instead figured I would try some pork jerky instead to avoid wasting anything. first world problems.
I started with 8 pork chops, roughly 2lb (~1kg) total. There wasn't any uniform thickness but some were pretty damn thin, especially after being handled on my cutting board to trim off fat/connective tissue. My cuts were thinner where the meat was thicker. It makes sense to me anyway
marinade 1/2 cup soy sauce, 1/2 cup red devil hot sauce, couple dashes liquid smoke, garlic powder, and a tablespoon or so of brown sugar. I wanted to compare this to the other beef jerky I made without the sugar, see below.
I let that marinade overnight and then some, and put the meat directly on the oven rack again and this time set it to 200 with the door slightly cracked open for a couple hours first, as I was a little more paranoid using pork instead of beef. After that I set it to warm for a few more hours and have been picking at the smaller pieces. It really turned out well and this time does not have an overwhelming salty taste, despite marinating for significantly longer
For those that want pics just imagine a few dozen fairly small pieces of jerky. It pretty much looks like that. Maybe ever-so-slightly lighter than usual due to using pork instead of beef, but not much.
Also I am noticing that despite the amount of hot sauce used, the end product really isn't hot at all. That is fine because it still tastes really good, but I will probably start using less but adding something a little more concentrated like ground cayenne pepper or maybe a couple habaneros to the marinade.

As a random aside, my girlfriend always hogs my jerky, so I usually cut up about half a pound worth into smaller pieces (about 1 inch by 1/4 inch by 1/4 inch) just for her because it's easier to snack on.
Another variation you might want to try if you're planning on eating it within a week or so is to dry it out a little more than you normally would, though not to the point that it's rock-hard, and then let it sit for about two days in a plastic bag at room temperature. The small amount of moisture left in it starts to sweat, and it really brings out the flavor in a major way.
