And when the board is coordinated on the flop (straight draws, flush draws), you need to drop the hammer right then, don't wait until the turn when their flush can already be complete.

His call on the turn is somewhat risky, but mostly correct. Since you made no preflop bet, he can only assume that you've got no pocket pair higher than his. And he's got the flush draw, if you do have a higher pair. He could have thought you had a flush and were value betting, but I guess he's willing to risk it.
