Kinda grunching on the knives thing-- Dull knives are more dangerous because a dull knife causes the user to want to push to overcome the added resistance (often this is the only option to make the cut with a dull knife) and this is inherently unstable as the pivot point of the knife is at the edge of the blade and the force is being applied several inches up at the handle. It's like trying to ride a bike through a foot of heavy mud-- it requires more force, yet the gyroscopic effects created by application of force are mitigated by the drag of the mud. Generally the appropriate motion is a slicing motion, which has the user pushing or pulling the knife with very little to no downward force being applied. | |
