    Default Let's talk hot sauce

    Right off the bat we have our mainstream sauces: tabasco and frank's. Hotsauce hipsters turn their noses at these fairly vinegar-heavy sauces as they are boring, if not fairly versatile. It's interesting to note that standard tabasco is 5-10 times hotter than frank's, so whenever I hear anyone say Frank's is their favorite, I immediately assume they can't handle their heat. Even tabasco green, which isn't a bad tasting sauce, is hotter than frank's. I don't hate frank's, it's just to get the heat I want, I end up using so much that the salt & vinegar starts to dominate too much.

    Novelty sauces. These are the burn your face off hot sauces that generally don't have the greatest flavor in the world. Currently I'm going through a bottle of "mother of all hot sauces", which is rated at around 300k scoville units, or around 600x the heat of frank's. I use 4-5 drops for a bowl of food and it's pretty f'n hot. This is my 3rd or 4th bottle of novelty sauce, and I've never been super impressed with any of them for anything other than making my eyes water ... which is sometimes what I'm looking for.

    Asian sauces. These are the Fbomb. I'm talkin' about sriracha or sambal oelek, or the like. They have a great flavor, aren't too weak or too strong, don't over-color the flavor of what you're putting it on. Just fantastic.

    Other noteworthy sauces with mid-range heat but great flavor and versatility:

    Tapatio is fave around our house.

    We do have a bottle of this laying around. If hot is what you're looking for look no further. The ghost pepper itself is rated at 1m scoville units and this shit aint no joke. It is really tasty tho. Nice smoky flavor.

    Yeah the two azn brands you mentioned are the best. I've probably eaten hole-in-the-wall Korean/Thai made Americanized Asian dishes like 3000 times, and nearly every time with those hot sauces. My favorite meals by far

    There is this one amazing Mexican spicy seasoning my sister has that I use on everything from steak to alfredo, but I don't remember the name. Next time I'm over there I can figure out what it is

    That one's (only) 180k scoville units, the one supa linked is about 650k. I've never been a fan of dave's insanity though -- in the novelty sauce category I've always preferred blair's sauces. But meh @ novelty sauces. They're more about cockwaving than anything unless you've killed your tongue so bad that normal sauces don't even register anymore.

    This is a great milder (but still much hotter than tabasco) boutique sauce that has really nice flavor:



    That one was really nice on eggs in the morning or fish at night.

    My favorites:











    I think tobasco is one of the worst hot sauces on the market.

    Honorable mentions: Louisiana Hot Sauce, Tapatio, Cholula.

    Also, fyi, "sambal oelek" and "sriracha" are types of sauces, like "salsa" or "mayonaise". They are not name brands.

    boost has the best taste in hot sauces hands down. take notes kids.

    I've never had the "shark brand" sriracha or texas pete, but can confirm the rest are fantastic.

    Must say I was underwhelmed by the Valentina. It's very cheap, so bang for buck is good, but that hasn't been a rebuy for me

    Thread got me thinking about this. My wife makes some pretty fucking good habanero cranberry sauce for thanksgiving and usually makes some more for gifts around xmas. If anyone's interested in some pm me and I'll see about sending it to you provided shipping it doesn't require me to go broke... oh, and bikes doesn't hate you.

    I actually found the seasoning I was referring to. Pretty sure this is the right one, same brand and looks like the one. I have yet to find a dish this doesn't compliment greatly, except for lettuce heavy salads, but that's probably because I haven't tried that

    fwiw, sriracha has been mentioned twice already, and when I mentioned it in my OP, I was talking about that one. I still prefer the rooster sambal boost posted -- it is my favorite.

    Ya, cock brand (this is what everyone I know calls it) sambal is for sure my favorite all purpose hot sauce. In many applications, it is so superior to thinner sauces for practical reasons alone. For example... if I try to put a classic american sauce, such as Louisiana Hot Sauce, on over easy eggs, it kinda just runs off them. Or if I try to spice up a sandwich, the sauce just soaks into the bread, which all but neutralizes it. Sambal stays where you put it, and doesn't get lost to absorption. Sriracha is good for this too, if slightly less so, but it has such an overwhelming garlic taste, so I often practice avoidance and go for a sauce with a more pronounced chili flavor.

    btw, I hate novelty sauces. Pretty much for the same reason that I hate "suicide" buffalo wings. I love spicy.. but I also want to enjoy my food.

    when i was in high school, the hottest sauce around was called 'the man'. we got some, tried it, it was indeed ludicrously hot, but also gross. i got just a speck of it on my fingers, didn't think much of it, bout half an hour later took a piss, then my dick started stinging, obv from 'the man', and the joke was i got 'the man on my dick'

    its funny for a bunch of seventeen year olds

    You guys are all talking Asian hot sauces and those are great but I this is a good one with a more Caribbean/Indian kind of flavour. It's medium heat but nice pepper flavour.

    I'm guessing noone here has tried Mad Dog, hard to imagine anything hotter than that. It doesn't taste of much though. I never get when people try and differentiate flavours in novelty hot sauce - you just feel the burn surely?

    You don't have to imagine:

    The Scoville Heat Scale for Chilli Peppers and Hot Sauces from ChilliWorld. Compare relative heats all the way to Blair's 6 A.M. - pure capsaicin.

    Sure you can taste the flavors, up to a point. Also, you do get tolerance.

    So what are you peeps opinion on habanero?

    I have been told there are good sauces that include it (possibly those mentioned in this thread). Personally I despise it. Habanero generally seems to be tasteless, and it burns down my throat into my stomach which is awful. The heat from cayenne and jalapeno stay in the mouth and I find to be much more delicious.

    I generally agree with you swig in that I prefer more cayenne/jalapeno sauces, but this is a good sauce, maybe cuz the habanero's cut & flavored with garlic and onions and shit.

    Habanero's awesome because of the smoky heat it has. Cut up a habanero, deseed it and cook it in fried rice. You can take out the habanero (or leave it in) and bam, smoky, spicy, super awesome fried rice. Obv many other dishes that can benefit from the same.

    It makes me smile that DoubleJ gave Sriracha a go and enjoyed it. Welcome to the club my friend.

    Let's talk heartburn and heartburn remedies (this seems like just as good a thread as any). I've started to get it here and there (it's not TERRIBLE) and I don't want to stop putting hot sauce on everything (that seems silly). Any ideas?

    I noticed a sriracha bottle in an Asian food store that was markedly different than cock sauce and thought, "nice! perhaps a different spin".. but I think it's just a cheap knock-off. Any one have experience with other chili sauces that claim to be sriracha?

    Well Sriracha is the type, not the brand IIRC, so you can get sriracha that isn't huy fong (rooster) sriracha

    It's hard to get flying rooster sriracha in the UK, although flying goose sriracha is readily available (Tesco etc). The bottles are almost identical, the interwebs tells me rooster is slightly hotter and goose is slightly sweeter but there's not a lot between them.

    This is a great hot sauce: Mamasita's hot pepper pure Labuyo sauce

    Made with Philippines bird's eye peppers. Hotter than Habanero Tabasco and tastes far better.
