    I've actually been thinking about this thread lately because I was recently startled to find that I actually really like Tapatio. I'm not a huge fan of vinegar-based hot sauces, but this one actually tastes like yummy peppers instead of being pepper-flavored vinegar (aka, ass).

    Yeah, I can 2nd this.

    The choices on the tables in the mexican restaurant at college were Tabasco or Tapatio, and so, OK, EZ choice... NOT Tobasco. I got to like Tapatio, and I agree with your assessment of vinegar-based sauces.

    That said, I have Sriracha in my fridge now.

    Oh yeah, make no mistake about it, Sriracha's still the big dick in town. There are just some foods where Sriracha doesn't quite match up as well as traditional hot sauces.

    Eg: I make poorman's chorizo by buying cheap sausages and then marinating them in paprika mixed with hot sauce. Sriracha really doesn't work well with this. Also, it's not as good of a pairing with salsa verde.

    But those are just the exceptions to the rule.

    My range of sauces from Funky Chicken!

    Going to be selling these on my website soon if any of you fancy it. (Sorry if this is Spam or something). I've only got my own, nearly empty bottles left as I sold out yesterday - making another load this weekend. I'm looking to get the labels printed properly as at the moment I'm just literally printing them at home...peel then stick.

    Also have my own homemade Jalapeno Tabasco style sauce in the little bottle. I fermented it for 3months. Its pretty awesome, but too much hassle for me to make and sell.

    The Jalapeno sauce is hot but has a really good flavour. Nice and fruity (I pretty much pick the chillies up from Heathrow airport and make the sauce that day).

    The Scotch Bonnet is fecking fiery, but also has good flavour. But does burn!!!

    This weekend I am on to making my own sriracha with 100% Filipino "labuyo" peppers.

    Will report here if I still have eyes and lungs after the cooking.

    Someone educate me here.

    I have never used sambal oelek that I can remember, but from what I gather here it is basically just chilies with no other salt/spices/herbs, and it's used with the intent of making food hotter while not altering the taste.

    Personally I use some 99cent spice classics ground red pepper. Sometimes I use cayenne pepper instead. Actually the spice classics ground red pepper might actually be cayenne pepper. Either way it's pretty much the same idea that it adds heat without adding flavor. Other times I use crushed red pepper-- same idea basically

    Is there any pressing reason to use sambal instead? I guess it would go better on a sandwich or something where you need a little moisture.

    I actually really like cholula. It's a lot like tapatio but a more authentic flavor.

    Sambal is fairly neutral, but has way more flavor than cayenne or crushed red pepper. Dried crushed red pepper also tends to distribute the heat unevenly compared to sambal. Try it, I like it a fair bit more as a general heat than either cayenne or dried red pepper.

    In southeast asia almost every place has crushed chilis in oil and that shit is the bomb. Not really a hot sauce aficionado, I tend to use whatever is available but I'll give a 74th nod to cock sauce, its obv great.

    If you could remove all the scovilles they would be sweeter than most I'm sure. When I use them in cooking I usually throw in the seeds and membrane too coz I'm a heat addict, just put some baby wipes in the fridge and you're golden

    i like hot things and sadlly have never tried many of these sauces. I tend to just like to put fresh chillies into stuff. Dried works too if that's all we've got. Sriracha i've only used for Vietnamense pho, but you guys have inspired me to perhaps try it one day with other stuff like burgers.

    Ya, If I remember correctly, cultures that eat more spicy foods are supposedly in better gastrointestinal/colon health. I pretty sure that may have to do with those cultures eating a better overall diet compared to ketchup eaters but I remember it showing that it has no ill effects and a ton of health benefits.

    I was informed at my nieces 2nd birthday party that she LOVES hot sauce, by itself.

    At the party there was a bottle of hot sauce, my niece found it, and cept insisting that my sister-in-law to keep putting more on her finger, and was then pouty and pitching a fit when she was denied more of the hot sauce. Then my brother told me when they were eating supper, he had a small dish of pickled hot tomatoes beside him that he was eating with some beans, and my niece reached over, got a tomato, ate it all cept the skin, and then went for another and another.

    It doesn't surprise me because she's a hard-ass little girl with the face of an angel.

    so I impulse bought a bottle of this stuff the other day because I can't remember ever having had it (featured on right):



    It's basically frank's red hot. absurdly mild, vinegary but decent flavor I guess. The bottle lasted 4 days of making caesars (drink). It won't be purchased again.

    Am curious about this funky chicken hot sauce.

    I've come to enjoy the garlicky hot sauces less and less. Pepper flavor is fine, but generally I just want heat from a hotsauce now. If your food needs a strongly flavored hotsauce, it probably isn't all that good to start with.

    Food tastes better when it does, it's been shown countless times. People get most enjoyment out of it when it's hot for them which for most people isn't very hot at all. That and hot sauces are mostly used to mask and overpower bland boring food doesn't really help the issue.

    You'd be amazed how good bacon tastes when it's been cooked with a tiny bit of cayenne pepper.
