I have 2,100 FPPs (in case this matters) and I'd like to organise a small (20 people or so) tourney for friends. Is this possible and if so, how do I go about it?

If you know can you let me know ASAP? Thanks!

You should be able to request from Poker Stars support for that ability. They don't give it to you unless you ask and have around your amount of FPPs.
Once all-in and called, you are simply at the mercy of the cards.
