Villain is quite a nit at 16/5. After he bets the turn I pretty much know I'm beat, but figured I'd take a stab it at it when the flush hit. Chances are he has something like AQ/AJ with no club.

Preflop: Hero is SB with A, 7.
4 folds, Hero raises to $0.4, BB calls $0.30.

Flop: ($0.80) K, A, 9 (2 players)
Hero bets $0.6, BB raises to $1.2, Hero calls $0.60.

not necessarily. And if he does, he would most likely only call a river shove with the J or the T of clubs. Which means he's gonna be folding top pair/two pair quite often.

If he's a nit I just muck to flop minraise - I think his flop minraise is a huge hand a big % of the time.. and in my personal experience I've found that once a nit becomes the aggressor they never fold.
