Hand 1: I don't see him raising a set on the flop, I'm stack off here thinking he has ak, qk, aj, aq or air. The best of those (aq), he doesn't have the odds to call. If he has kj I'm paying him off, but since you have no reads I assume he isn't likely to be playing back at you with no history.

Hand 2: I'd definately bet the flop for value.
