I'm really not sure what the right play is when you flop the nuts in EP in a multiway pot. Just calling seems dangerous. Raising the amount I did gives my hand away. Is shoving better? Min raise?

I don't think shove vs this makes a lot of difference. Don't like calling or min raise. You may be free rolling, and worst case he has like 8677 and you're 40/60. And maybe he can't get away from the 63.
