PartySkins- Most fish/worst structure
Ultimate Bet- best structure/few fish
PokerStars- Best balance.
Don't know what you are looking for in "most prize money" Prize money is a function of buy in and # of players. All 3 of the above sites have large tournaments-> large prizes.

To win in poker you only need to be one step ahead of your opponents. Two steps may be detrimental.

BoDog - most fish, biggest overlays, structure not that great but benefits tigthter players(10 handed, slow blinds, no antes), small fields
Ultimate Bet - best blind structure by far, best players, small-medium fields
Party/skins - very large fields(Party and PokerNow only), slow blinds (empire has 20 min levels) and no antes
PokerStars - good mix of good/bad players, large fields, reasonable blind structure. Has the widest selection of MTTs in terms of both buy-in amount and games offered (NL, LHE, PL HE, Stud, Stud Hi/Lo, Omaha, Omaha Hi/Lo, PL Omaha). Probably has the best satellite set-up of any site.
Paradise - Pretty poor players, blinds increase a little too quickly IMO (10-12 minute levels in buy-ins of less that $100), small-medium fields, offer a decent selection of games if you play more than just NLHE.
Pacific - I have only played in a handful of MTTs on Pacific. The players were generally poor, but the starting stacks were small and blinds increased somewhat quickly. Disconnects happened way too frequently.
