I have been playing at pokerroom recently and have managed to build my bankroll to a considerable amount playing 25 and 50 PL/NL ring games.
thing is, I don't use Windows so I can't download and play at a lot of the sites
I want to transfer some of my money to another site to take advantage of the first deposit bonuses, but I can only play at sites with a Java client (also Pokerstars, which is an exception)
Does anyone have any recommendations? what other sites are there that use Java, with a good bonus for my level?

You could always try a windows emulator.
Also Full Tilt has a client for Macs

You can try Bugsys Club although its kinda hard to get you bonus, not much action at all~

All the B2B's run a java client. Check out running bonuses and offers at the B2BHeaven site. You can clear bonuses slowly at 20NL, but 50nl works reasonably well there. B2B's include Martins, Staff, DreamLandpoker, No1poker, etc.
