1. if I hold a big stack of chips in my hand and drop them in a delibarate fashion (not too fast, not too slow, separately a few chips at a time) as if making an orderly wall of chips?

2. (if yes) Am I likely to get called out on a string bet if I make it in such a way?

A little while back, I got a ruling at Commerce that a guy who held out a bunch of chips over the line, dropped the amount for a call, and then waited a few seconds (without moving his hand), looking at me, before dropping the remaining chips for his raise, was a string bet. (He was warned never to do it again if he wanted to continue to play in the casino.) He was quite agitated and argued that it wasn't a string bet because there was only one forward motion, but at least at Commerce that isn't the rule-- any non-verbalized bet that is intended to deceive another player into thinking it is a call rather than a raise is called a string bet.

On the other hand, if you drop your chips relatively quickly and don't include a long pause, it's not likely to be ruled a string bet.

That said, it tends to ruin my whole day if I am called for a string bet and don't get to raise. So I verbalize my raises. For what it's worth.

No, but the devil is in the details.

At crown casino (melbourne) this is a string bet and the dealer will call you on it every time.

Correct. Remember, physical tells are extremely overrated. So, in order to attempt to get a quick physical tell that may not materialize and may not be useful even if it does, the player wants to risk not being allowed to raise in a situation where a raise is +EV.

It always struck me as a dumb calculation, which is why I verbalize my raises and avoid the problem.

Ding, ding, ding. Me too.
In Kansas City, the casino's all have a line drawn inside the racetrack area that confirms a bet. Anytime chips pass that line toward the pot, they have been wagered unless the dealer can confirm a prior, verbal, binding action or the villain has made another betting error.
Playing live . . . thanks alot Bin Laden.
