1) Don't check a turn like that... you're lucky that he hit his nut flush AND you hit your straight flush. What happens if you didn't get your straight flush but a heart fell? Could you have called a bet from the opp?

Nope I wouldn't have called his bet, but also the chances of runner runner hearts are so low (1 in 25?) that I wasn't worried about it.
On a hand like this, I'd rather let him see the free card in a 30-40 cent pot (and get a smallish bet in on the river) than get a nice bet in and him draw me out to his nut flush. I know 30-40 cents adds up, but the guy was paying me off with his other marginal hands so I had no problems letting it go if any heart other than T fell (I wasn't trying to draw to the straight flush, I didn't even realize I had it until I really thought about it)

Yes, the chances of runner-runner hearts are slim, but probability doesn't work like that... the turn and the river cards are independant events.
If you put him on a higher flush draw, there's no point in checking the turn unless he's the kind of person to bluff at the river. A heart hits, he's got you over a barrel and you lose your 20 cents. If a heart doesn't hit, you get nothing more out of him. The only card that would help you EV wise is that straight flush card.
You have a 1/46 chance of him getting a higher flush and you beating him, which means you're most likely taking his stack, which would mean that you need him to have something like a $8.50 stack in order for this to be a profitable move.
