In my opinion, there are two reasons to slow play something. One is two conceal your hands true strength (this is often done by smooth calling the other guy and letting him do the betting). The other is when you have such a big monster you want the other guy to catch a smaller monster that he cant let go off and then destack him!
We all know that laying down a lower set to a higher one is virtually impossible, so when i flop a set of ladies against a lowly pocket pair of fives, I just wait for him to catch his 3rd five and then drag the green in...

Hitting a high set on a flop with no flush/straight possibilities is great. You're only in trouble against AA or KK, and only if an A or K comes out. I follow the same strategy as you. Check the flop, modest bet on the turn, and then as much as you can get away with on the river. That last bet can be tricky, except in your case when they guy hit and bet accordingly.
