Is there any way to display your own personal stats for the session only, while still displaying everyone else's overall stats?

When 9 tabling I sometimes lose track of how hot/cold I've been running on a specific table...

On stars you just have to double click your name and it will show your current stats for that table.
Never bet on a white man in the heavyweight division!

similar pa hud question that has bothered me -
preferred seating. Is it possible? It always seems to mismatch the stats with the player so I can never sit in my preferred seat.

Set prefered seating in PaHud as well as the site. Make sure you have an updated Hud.

For session stats, just select "show mine" in the layout manager for stats you want to see. These are by default "session only" and opponents stats are "all" by default.
