What sets me off is that this guys 3bet stats is 2% over 500 hands playing 30/10 and 30% wtsd. Can i stack off here

Sure. In fact, why don't you bluff every street on every hand! Completely unexploitable.

Even the dumbest regs will play back at you after the first few times.
