If you randomly bet on the line, you are on average 50% to win. If you don't know anything about sportsbetting at all, this is probably more ev+ then anything.
Or, you could gamble and bet on a few heavy favorites, but if you lose one, your busto.

I just ended up looking for a baseball game with evenly matched teams and bet on both of them to clear my bonus.

Careful where you whore, because some places will shut you down. (In other words, if you're going to whore, you may want to bet the other side at a DIFFERENT book).
But yeah: it's on the same level as poker bonus whoring and casino bonus whoring. You can do it: Just takes a little patience, intelligence, and luck.

Are there enough sportsbooks to make it worth it? Doing it across a few different sites makes logical sense... are the bonuses they give large enough to care about?

Some of them...
Usually, lots of new books will give $100 bonuses for a $100 deposit.
Then, you bet the entire $200 you have at the new book on one side, and another $200 at another book that you like. You're hoping that you lose at the new book and gain the difference at the book you like.
Voila.
If you lose, rinse and repeat again, and again, and again...until either you finally lose at the new book and essentially 'moved your balance' to the book you like, or you have completed the rollover at the new book and can withdraw.
Sportsbook bonus whoring at its finest. It's not as big of a thing (in terms of how lucrative it is) as casino bonus whoring or poker bonus whoring, but it helps pad the bankroll from time to time.

What are some of the sportsbooks that offer good bonuses like that?

As of right now...none. I'll let you know. There should be some when football season comes closer.
Some books are very scared right now with the whole DoJ killing BetonSports thing, so they're a little reluctant to give out bonuses.
