Id love to see one of these true shaolin master guys against MMA fighters. However, shaolin masters kind of refuse "pride" fighting. But jesus he's quick.

It's been done. They don't compete because they get their asses handed to them. Those forms focus too much on stuff that was great against mounted, armored opponents or just looks pretty. Once they get onto the ground anyone with any skill at all in wrestling or BJJ takes them apart literally one broken joint at a time.

I want to see that whole fight. Its like both are impossible to hit, all matrix style. The shaolin guy sure seems like he has the edge, though. Its like he can see whats coming, and when it comes he's just... not there anymore. But he never counter attacked. Even right after that initial kick which he blocked completely effortlessly... I think he could have put a hurtin on the guy right there.
And after the first tae kwon guy's flurry, the shaolin was in perfect position to farking own him. He's low, perfectly balanced, looks like he's ready to spring off his back foot and set up a good kick to the face.
Damnit! The shaolin monks are obsceneeeely awesome.
But i think as soon as they just get tackled to the floor they're fucked.

There is too much money at stake for them to be a no-show if it was an optimal way to fight someone 1 v 1 with little or no rules.
Stuff that works:
Judo
Brazilian Jiu-Jitsu
Greco-Roman Wrestling
Shoot Boxing/Wrestling
(Kick) Boxing
Kenpo Karate (full contact, schools that don't focus on kata crap)
Muay Thai!
You need to learn a balanced enough mix to have a solid Stand-up, Clinch and Ground games. If you're a stand-up expert take-down defense is huge.

I'm NOWHERE near an expert on competitive sparring of any sort, but it seemed like at that moment the ref stopped the fight since he was basically on the edge of out of bounds.

i wrestled in high school and although i was never really that good at it, just knowing what i learned really helps if anything ever does come up (even though i'm a lover not a fighter). most of my friends are 40+ lbs heavier than me but if we ever rough house just messing around i can hold my own. but adding punches is hugely -ev for me!

I dont think thats fair. These are the people who live in the middle of fucking nowhere who stand there and punch a wall for two hours a day, and then move over a little and slam their heads into sand bags for two hours a day, and then hang themselves from cloth nooses to strengthen their neck muscles.
The true masters just aren't interested in monetary rewards and fame and that sort of thing. They don't even do competitions with each other because they arent interesting in seeing who is better even in their own little dojos.
I'm not familiar with their ground style, if they really have any. I'm not a MMA fan, just saw the clip I linked and then a segment from a national geographic special on them which was on the "you might also like" or whatever list.
I do know that in the early UCF the real artsy fartsy martial artists got destroyed by the grapplers, though.

MMA is highly advantageous for grappling styles. in a street fight, you can't afford to go to the ground, because while you're going for that arm bar his buddies are coming to kick you. striking arts are still king on the street.
as for kungfu/karate vs MMA, it really doesn't matter. it's not the martial art. it's the fighter.
if you're taking a kungfu/karate guy that mainly focuses on forms and katas, of course they are going to get their ass handed to them.
if you're taking TKD guy who only competes in tournaments where sparring is a point system, of course they are going to get their asses handed to them.
if you taking anyone who even wears pads during sparring, of course they're gonna get their asses handed to them.
anyways, if anyone's seen the Tito Ortiz vs Chuck Liddell, you just need to know a little bit of takedown defense and the grapplers will have a bitch of a time trying to take you down.

This is somewhat ridicurous. In a street fight while you are trying to Jab, Cross, Hook, upper cut, cross, his buddies are coming to kick you. It really has nothing to do what style you are using if its multiple v. one. Running is king on the streets.
In a one on one confrontation against average joe, Id take BJJ any day. Fuck the take down, I would just butt scoot until he gets so fucking confused he ran away. I mean who the fuck wants to screw with someone butt scooting?

while it's never been "proven," i'm a firm believer that if some shaolin monk can break concrete with his fingers, it's irrelevant about the whole "his target is moving."
if you can break fuggin brick with your fingers, i don't think it'll take long to train to do that on a moving target!!!
