You want simple? how about baked fish, you know, whole red snapper or something, clean and scale it, lightly rock salt the inside and sprinkle some cracked pepper as well, chuck some garlic cloves and some lemon inside, choose a herb like thyme as well. Bake.
or how about a standard greek salad. Make a vinagerette to drizzle over some feta, some fancy looking lettuce, some tomatoes.
or....
Eat.
i bought some nice meat this afternoon. And fresh picked garlic. And other veg, but first i go climbing

Something I like to do is broil(I think) a couple boneless chicken breasts. I just season and put sauce on them (sometimes asian sauces, sometimes others like bbq and brown mustard) and do 400 degrees and just keep an eye on it, maybe like 25 mins. Then I cut it up and put in a a green salad or cut it up and put it in a wrap with veggies. Very easy and I get 2 or 3 meals out of it.

Grilled steak and corn with tomato salad.

fresh mozzarella, onions, or whatever your gut desires can be added to this salad
Great tomatoes make an outstanding salad.

If you like Tilapia, I made this last night and it was awesome as well as easy to make.

I am also a HUGE fan of grilled veggies like squash, zucchini, asparagus, and brussel sprouts (usually hate them, but love them grilled as it takes out the mushy feeling they get when cooked).

I don't know if you like shrimp...but I recommend making ceviche:

It is pretty simple to make and is pretty damn refreshing in the summertime.

Start simple and work up.
Simple thing I cooked last night was spaghetti squash w/garlic and butter as a side to pork chops. Cut spaghetti squash in half, spoon out seeds and put the cleaned halved cut side down on an oven-proof plate. Bake at 375 or microwave on high for about 20 min. Scoop out cooked squash into bowl and mix with 4-5 cloves of chopped garlic and a chunk of butter. Microwave again for about 3-4 minutes and serve.

Mango salsa is excellent on pretty much any grilled meat or fish.
Cube a mango into 1/2 inch pieces. Add a handful of diced red onion, a diced fresh red chili, a bunch of cilantro (or parsley of you don't like cilantro), salt and pepper, the juice from a lime or two and a splash of olive oil.
