my roommate is korean and he always stinks up the entire apartment with his indigenous nastiness.

He eats this cabbage mixture thing that has some kinda red sauce and looks nasty as hell. Looks like he's eating human organs.

boost when I come to Chi-town this summer you're cooking end of story

  19. #19
Well, given the cost of avocado's over here and the amount it looks like you used for the salsa and just whole I'd say that first dish is most definatly pimpin and need balla-size roll to be able to afford to make

What's in the (looks like) tortilla's?

quasadeas (sq?) So I just sliced up a chicken breast, thew some cayenne and chili powder and also salt on it, sauteed it in a lil bit of olive oil, then cut it up even finer (dont like the texture of big chunks in my quasadeas.) Then its simply the chicken and cheese.

Yes avacados are expensive as fuck here too, but I only used one for the first dish, and half of one for the second. If youre only cooking for yourself and using avacado, normally half will do. A good trick is to store the other half in the fridge with the seed in, it stays better longer.

Meal probably cost 3.50-4$ at the most. No way Im getting anything near this for less than 10$, and the chicken would probably be in big chunks which is gross, also it would probalby come with jarred salsa and def not a whole avocado.
You-- yes, you-- you're a cunt.
  23. #23
hmm, would have thought two for the first dish given the amount of slices + the salsa/salad...interesting.

The salsalad is just ava, red onion, tomato and corriander/cillantro?

Might give that a try tonight, was deciding what to have for dinner, but to put it in perspective price wise would be looking at around $3 for the avacado and about $5/lb for chicken breast, around $3 for a pack of tortilla for the quesa so prolly bout $15 all up, though prolly also get 2 meals worth overall unless it's really tasty
  24. #24
photography and plating is terrible, and the sauce didnt reduce in the oven as I had hoped. Also coulda used some more salt. Threw a little salt on the plate and it was really tasty.

Rosemary braised chicken with green pepper, tomatoes and garlic mashed potatoes.

3$ for an avacado? Youve got to be kidding. If you live near an urban area, find a super marcado (yes a mexican super market) Avacados are like 1.39 at jewel (one of chicagos big supermarket chains) and they are 3 for a 1$ at the super marcado. Also its not really 15$, so long as you use the left overs. I strongly advise against shopping for a single meal, but instead have some things in mind as you shop, and keep your kitchen stocked. When I last shopped I bought a buncha stuff as well as 2 bags of frozen raw shrimp. The two bags costs 30$, but they will provide me with a ton of meals, and having shrimp on hand is very nice for variety. Its easy to incorporate some leftover rice into a dish with some sauteed shrimp as I did. But if my kitchen wasnt stocked and I only had bought the X and Y for one meal, the rest left in the packages would go to waste, and my meals end up costing me like five times as much.
You-- yes, you-- you're a cunt.
  26. #26
I live in the capitol of the country so could say it's an urban area (hint: look at my location)

Yeah, I try not to buy for single meals but usually do since I never decide what I want until I head home and waste too much fresh food if I buy it once a week (though that should change, hitting back at the gym now so need to plan better).

I need to keep my pantry stocked better for sure, I'm just lazy
  27. #27
Oh, in urban areas in the US there are super marcados scattered about. They are a lot cheaper. A pound of chicken breast would be like 2$. The only thing is that the meat a lot of hte time is less trimmed, but its easy to trim meat, and it only takes a second. Things involving knives are fun anyways.
You-- yes, you-- you're a cunt.
  28. #28
I just figured that out recently too. If you buy your food at ethnic supermarkets you save a TON of money. I haven't been to a Mexican one but I've been going to Asian ones and it's working out great.
  29. #29
yep, asian ones are good too, esp for fish.

Why are avocados so rare in Oz? I've never been to Australia, but I can't imagine the climate in parts of Australia is very different from California or other parts of the world where avocados are grown. They don't grow avocados down there?
  32. #32
yeah, the climate is good for growing them esopecially up in queensland...bought one today they are around $2.28 atm for small non-haas ones (which I think is about $1.75 US with exchange rate) but they are in season atm.

Main reason for a lot of produce being expensive is the massive drought we are in now (or for the last few years really)...they are even talking about building a desalination plant or waste water conversion plant for Sydney and Brisbane due to water supplies being so low.

Take that sort of drought and move it further west where it's drier ot start with and things are really bad for irrigation crops and stock so we end up with much higher prices now.

The final nail is that we have essentially 2 national super market chains that are price makers that dictate the price to producers and undercut local small markets and it's a bad situation for wanting to eat good and healthily.

haha I see waht you mean, the head is to the left, and hte leg on the bottom right, lol.

I remade teh quasadillas today to use up the rest of the tortillas, and one more of the chicken breast that I didnt freeze. Plating stuff is a lot of fun, one of my favorite parts of cooking. I always end up with something kinda trendy, but w/e I like symmetry

Another braised chicken, this time with a morrocan twist. Some nice aromatic spices, red onion, carrot, and dates. The base is carrot juice. Served over rice, obv, garnished with cilantro.

It may look sexier that way, but I think it tastes a lot better with just a plain soft tortilla. It has chicken breast, garlic, fajita seasoning, red/green peppers, white/brown rice, shredded cheese, hot sauce, and sour cream. I've been cooking for myself a lot more lately, and it's definitely going to stay that way. It's so much better tasting + costs a lot less than going out everyday.

Apparently it is, boost. This evening I was at the supermarket buying ingredients for dinner tonight and the cashier asked me with a surprised tone of voice, if I was going to cook dinner when I got home. I'm like, I was planning on it, why? She said she doesn't know any guys who cook (wtf?). She was pretty cute so I asked her if that was an offer to cook my dinner instead.

    Beat: she didn't even smile.

Brag: dinner was delicious anyway. This is roasted chile pepper bisque.

  50. #50
haha thats gotta be one of the funniest things a cashier at a grocery store can say. And that looks good Ive made a couple of braises recently, and been cooking a good bit of mexican food. I think its time to find a fun new focus, Im thinking soups.

ingreidient list for the soup? I cant imagine how it would taste, is it served hot?

I grew up in the city (evanston) where kendall was originally located, it has since moved to downtown chicago, so this is how I know of it. Besides kendall though I know nothing about culinary schools, whats vassar and cia? What are some other big name american culinary schools?
