Seriously - go hiking at Red Rock if it's not too hot, you won't be disappointed. Just got back a week ago and it that was as much fun as the drinking/poker/etc. Pretty close too, about a 35 min drive.

I liked Blue Man Group
Do you play golf, around the strip there are a few great courses, but they are pricey (talking $400+/rd). Cascata is best one that I've played.
Best nightclub imo is "Tao" at the Venetian
Strip club=Spearmint Rhino best by far
Best pool on the strip is at Mandalay Bay, off strip, the Palms Pool on Friday (if you can get in) has the hottest girls. Both aren't easy to get into, if you know someone staying at either though, that's all you need (them coming with you that is).

It may be kinda a lame response... but take your time to wander through the Luxor and the Excalibur and see some of their attractions.
I loved the Excalibur's nightly jousting tournament, I was also a big fan of Luxxor's motion machines. (sit in a theater where the seats move in coordination with the movie you're watching) They have a tourn of 4 rides that gives the history of the luxor in a fantastic display that is pretty neat.
Hookers and blow are good too.
