Something I see a lot is when I'm drawing OOP and HU with an opponent on the flop I will check and he will bet the min or 2x the minimum. I will call and then check on the turn and he will follow with the exact same sized bet. Then on the river he throws down a pot sized or slightly larger than pot sized bet.
These are always bad players making this move. What kind of hand do you generally think I'm up against? I think it's a set or some other big hand that was badly slowplayed.
Anyone have a different take on what this is?

They are exercising a donks version of pot control.
They are NOT trying to push you away from their busted draw.
TPGK or better, call it. If worse, consider it a bargain you got to see all 5 cards for so cheap a price.

Yeah this is something I was thinking about trying to exploit but I think you're right, it just aint worth it.
Another phony looking line is when a board is say: 4 10 10 rainbow. You, first to act, and two other guys check it around. Then a J shows up on the turn. You check and one of the other two guys bets the pot. Think it's worthwhile trying to push this guy off or is it more often he hit on the turn and doesn't want to fold than a really bad bluff?

Generally speaking, it's not worth the price of paying to know either way. JMHO.
