Yes, I'm using Poker Office and it's working fine with Pokerstars.

PockerTracker works with PokerStars as well.

I downloaded Poker Office yesterday, but there was no option to select Pokerstars, there were a bunch, but no Pokerstars. Was I doing something wrong, to be honest I had no idea of what to do once I downloaded it - any help would be awesome!

does Poker tracker work with pokerstars? Are any of these two good for NO LIMIT? I've read that they are better for LIMIT hold'em.

Both work for pokerstars. Both are good for both no limit and limit holdem. However you're partly right, pokertracker (the original) was developed for limit games.
I've never used pokeroffice, so I can't help you there. I'd suggest going to the pokeroffice website and reading some of the faqs.

Choose Live tracker in the menu and then Start live tracker and once there you choose Pokerstars as the site. When you have done that you go to Live tracker in the menu again and choose Live tracker autodetection mode and Activate.
That should do it, hope it works out for you.

I'm playing mostly NL and in my oppinion Poker Office is a great tool to analyse NL as well.
