I'm having trouble in general knowing when to protect a hand and bet vs slowing down and trying to get to showdown without building a huge pot.

I'd raise more preflop. Compare relative stack-to-pot ratio on the flop if you would make it 60, 70, 80c preflop.
What range do you put them on on the the turn, and why do you check?

Bottom line is: I wouldn't play that table. There are 3 50bb shortstacks and 2 20bb shorties.
The strengh of a hero is defined by the weakness of his villains.

raise to 70cents preflop and please bet this turn. You have middle set on a board thats going to get a ton of action. Get as much money in the pot as you can.

Villan reads here would be nice, but this is a scary board for a set. Assuming TAGG stats of 14/12, you have about 64% equity here. You could easily be up against AK here, too. I'm probably calling here.
