NONE!! I only use PAHUD for displaying the hands when they fold.
But, if I were to use it, I like to see VPIP, PFR, Aggression Factor, WSD, W$SD, # hands, Att2 steal blinds, % defending in Small Blind and % defending in Big Blind.

This is exactly what I have it set to.

To win in poker you only need to be one step ahead of your opponents. Two steps may be detrimental.

There's really nothing else too important to me. You use the VPIP, PFR and WSD for Table selection (the higher the better) and you use the Defending the blind stats to see how often you raise for value as opposed to raise to steal. You use the att 2 steal blind stat to determine your own defending range.
But, these all go out the window if they way they are playing dont fit to how their stats are. Maybe a TAG is on tilt or a fish was being made fun of and is now tight, etc etc.
