Lately it is like I am running scared from these hands. More often than not (at least lately) the following scenario happens:

I raise or 3 bet if in LP, cap AK if possible.
Flop comes down all undercards or total miss, think something like J 7 5.
Continuation bet gets a caller or two. Turn blanks. Another bet gets called. River blanks. Is it more profitable long term to just keep betting into this or just shut it down with A high? Possibly it's just because right now my earnings with both of these hands really suck.

Especially when a high card hits that isn't in my hand (eg a Q with AK or a K with AQ) I have this weird fear of my opponent always having that card for some reason.

It depends a lot on your opponents. Often AK has pretty decent showdown value. Often it's best to check behind on the turn to entice a bluff from loose aggressive players.

Against loose passive players, often I fire 2 barrels and check the river because they are usually chasing and will only show it down if they have a pair or better.
Some days it feels like I've been standing forever, waiting for the bank teller to return so I can cash in all these Sklansky Bucks.
