Against his range, I think I'm basically flipping a coin here. I'm 40/60 against sets and wraps with a TP, but 60/40 or better against most other wraps. Is there ever a situation in which you don't get it in with this type of hand?

Yeah, as long as you have a nut wrap and there is no FD getting in is never bad.
here is a long ramble from a different post re: waiting for the turn.

The best time to slow down and see the turn is when you have a tight opp who you know would not raise you without a set and you have a big wrap. If the turn doesn't pair you commit, if it does you can get away. Usually the set will still have to call even if you get there on the turn since you might not have it and he can still fill.
Another example would be if you have KQJT on a T96 flop. You're a little ahead of a bare 87 (isn't omaha fun!) so getting in on the flop is fine, but if you wait some good things can happen. You may be able to bluff him out if the board pairs or if say a 7 comes. Also he might have two pair or a set rather than 87 and will fold if he doesn't boat.
Of course, there are negatives - if you misread opp's hand or he has two draws. In this example you would hate to let a hand like QJ86 off cheap, that hand will almost always felt and you're up 2/1. In the wait for the board pair example you would hate to get bluffed out by the same or a worse draw. And if your draw is a combo with a flush draw you may lose you customers when the flush hits. If in doubt with a big combo draw or nut wrap it's better to get it in.

Watched a Jman video yesterday in which he makes the recommendation that you avoid getting it in with a set on the flop in these spots, basically in order to lower your variance for when the obvious wrap/draw cards hit the turn. Both lines make sense to me...thoughts?

it's all about villain, if he'll felt worse sets or two pair waiting for the turn is spew because then he's the one folding when you would have had him in there drawing to an out or two or even worse bluffing you out. If you give up those spots your swings are going to increase big time.
