I have encountered this scenario many times, and I am always curious what would be the optimal way to get paid off with the nuts.
Ex.
Hero = Ac3c as BB.
4 Callers to the flop (SB, Hero, X, Y).
Flop = Ah10c9c
UTG/SB bets
Hero calls
X calls
Y calls
Turn = 6c
UTG bets
Hero?
I hit the nut straight, and have two potential callers behind me.
A RR might scare off X &Y...and UTG/SB might only call on the turn & River.
Do you RR, or C here?

I like a call here ... go for overcalls and hope one of those remaining 2 hit the flush also and raise so you can get in a good 3-bet. If you raise, you will likely chase the remaining 2.

I go for the raise anyway, have to at least give yourself the opportunity to win the maximum, as X and Y may fold anyway and if one folds its a BE play, if both fold you lose a bet but if you raise and at least one calls, then you are ahead.

I like a "it depends on your opps".
Are you sure UTG is coming along for the ride if you raise? If not, I like the call to induce over calls. If so, then I like the raise (you might even get lucky and have X or Y coldcall your raise).

I'd like to point out that on that turn you only have the second nuts. But that's just because I'm a nitpicky bastard =). In reality, you pay off the straight flush every time, so yeah, extract the maximum is the name of the game.
I usually raise. If you're lucky someone just hit a lower flush or a straight and will call you down (or 3-bet if you are really lucky). Two pair or a set will also call down because they have odds to fill up (and may think they still have the best hand anyway).
In most cases though you are not this lucky and the people behind you have mediocre hands. But many players will pay you off far more frequently than you'd expect. For example, some people just can't fold top pair even after a bet and raise on the turn. A naked Kc or Qc may call. Etc... And as elipsesjeff pointed out only one of them needs to call to at least break even. And to top it all off, even if both of the other players fold, the original bettor may re-raise you if they think their hand is strong enough.
So to sum it up, I agree with chardrian that it depends on the opponents, but against "average" low-stakes opponents a raise is the move I make.
