of a particular hand do you need to determine the winrate/if playing this type of hand is a leak?

a LOT...You can probably get a decent ballpark figure for a hand over the course of seeing it 1000 times, but even then if you are talking about a hand that has just barely positive or negative value, you are going to need WAY more hands to tell for sure if it's a winner or not. Especially considering that by the time you have enough hands with that hand, you will probably have learned to play it better than you were when you started.

Around about 50 hands if played at the same level in the same type of game, better to be around about 100 for NL. However your standard deviation will still be pretty large.

I agree, you're probably not going to find out your winrate for individual hands unless you play loads.
