I called on the turn because I assumed I still had outs, and on the river I thought there was pretty much no chance I was good but I called anyway getting 11:1. Standard?

According to my research on way ahead/way behind situations, the turn is most likely a bet/fold against an unknown.

I would fold the turn if I didn't have a gutshot draw, but since I did I don't see how I can fold getting 8:1.

You can't, your gutshot draw is pretty huge here and the pot on the river is too large too. It would be different if you were overcalling that river but you're not. I think you'll be good enough here against the random idiot (and even moreso at the higher limits as they will raise the turn in some situations with a flush/straight draw, but usually only HU).

What do you think you are up against? I mean, against J9 and J5 you have more outs than your gutshot.

I think you are good here about 10% of the time at the river. Which makes it a crying call.
The turn is probably a fold without the gutshot, but even then you need to have some read on your opponent.
To win in poker you only need to be one step ahead of your opponents. Two steps may be detrimental.
