I'm wondering how often betting the turn with the nut flush draw is going to buy you a river card when the nut straight is obviously out there.

I'm thinking this is poor play on the part of my opponent who had the nut straight on the turn and it seems slowplayed it given his river actions. Are players ever scared of betting the turn and building a pot if they think you have the nut hi also?

Yeah I understand that.

I suppose I meant, how often does a player check behind the nuts fearing you have the same hand but with the flush draw and nut low draw.

This then probably isn't the best example since there is no low draw and only 2 cards to make me the high.

He HAS to charge my sets and flush draws, surely, every time?

I remember I used to bet every flop that I had raised preflop for fear that when I did actually have a big hand, like AA, and bet the flop, no one would call. That couldn't be farther from the truth. People tend to play their own cards and don't pay attention to you. Only adjust when you have to. First play a straight forward game and then if you need to use more deception, implement it; most of the time you won't have to though.
