Villain is a relatively maniacal 48/28, and I suspect he's tilting, so im comfortable with the 3bet preflop. Hows post-flop?

I think w/ the read you have on this player you are playing it correctly. I don't know if he 3 bets w/ A/Q but more likely A/K or big pocket pair, K/K, Q/Q, J/J.

Cap the flop and just keep going. Maniacs with premium pairs will just keep betting, your trips are not completely secure, especially after the Turn, and the Turn likely gave him a straight draw (OESD or Gutshot), which you have partially blocked by your Ace.

If he is a maniac, I'm not slowing down until he 3-bets me on the turn. If we get to that, I'll take a look at what stats he has on each street and decide what to do.
