Hand 1 - I fold. One draw to the second nuts and I wouldn't be surprised to see a set here. Pre I min-raise if I'm going to play it.
Hand 2 - Bet pot on the flop. Turn you wouldn't have odds to chase so fold.
Hand 3 - yeah bet turn

3:1 actually. If you're facing 2 pair or a wrap, or even a single set you have the odds. If any of the hearts are dead you don't have odds against a set.

Out of everything the play I like the least is checking back the turn in hand 3. He gets to the turn with a lot of equity against your hand but his calling range of a bet is pretty tight. You have up to 21 outs which is uh, well, pretty sweet and you have SD value. I'd bet and not care about getting all the money in.
