In stud, starting hand values aren't as static as they are in holdem, since in stud there's a significant amount of information about the remaining constitution of the deck on 3rd street (in holdem, if you were holding 3-3, and somehow knew there were no 3's left in the deck, you would fold your hand without hestitation, but this type of information is never available in holdem). In general, you prefer to play only those hands which are statistically favored over the field of opponents (big pairs and rolled up trips), or drawing hands which stand a reasonable chance (meaning they are live) of outdrawing the current best hand (3-flushes, high 3-straights, small pairs with overcard kickers). As far as how to play the game beyond the first 3 cards, experience is probably the best way to learn.
