I was indeed using a universal remote.
Sometimes I ramble in this thread because it feels like the randomness thread to me a bit. And I guess it's a stupid thing to complain about, but I guess when I'm watching a 'reporter' on TV, I feel the ability to speak fluent and proper English is a fairly important trait. |

Life is pretty awesome right now.
Barely slept last night because I was bullshitting my way through some stupid restaurant review for class. I got a call from my bank this morning that woke me up, good to hear from them cuz I needed to sort something out, and now its fixed. Went to this lecture class and it was actually interesting. I went to eat lunch and saw a freind, sat for like two hours and had a really good conversation. Then was leaving school and decided to follow up with this place I had been staging at (stah-jing: to work for free in a kitchen as a sort of interview and/or learning experience.)
The chef there is Rolland Liccioni, a fucking culinary pimp if Ive ever seen one. There is a lot of buzz surrounding other chefs in the industry, but Chef Rolland has been at it for a long time, and has fine tuned his craft. Not only that but he works the line six nights a week and hes gotta be a good bit over 50 years old. He just had knee surgery on wednesday and is back working the line today(friday), he might have even been there yesterday. Anyways, hes a fucking legend and definitely the person I want to be working under.
So I gave him a call and he had me come in since its right near my school. I thought Id grab an application and try to put in a few words to hopefully make him think it was a good idea to give me an internship. When I got there he greeted me quickly then tolled me to talk to ben, the sous chef. Ben sees me, approaches me and hits me off with a pound cuz he had a glove on his hand, probably breaking down poultry. Hes a bad ass in his own right and a really cool guy. He gets right to the point, "so what exactly is your schedule?" I tell him and he responds "ok so you want to start now doing monday wednesday and friday then roll into your internship in the summer?" Now remember I was just expecting to get an application and try to set up a few more stages so I excitedly blurted, "Definitely!" He got me a W2, some other forms and an application just to have on file. "Ok, Ill call you tomorrow and give you details about pay and scheduling." And that was it, Ive got an internship at my first choice of places, and Im fucking totally livin.
Oh and then I came home and played some 50nl hu since I hadnt played nearly all month. I took down 3 buyins easily. On top of all that my girlfriend (formally my ex), who is moving here for the summer will arrive in nine days!!

The salmon king crab terrine. I plated this as I was working garde manger station (do all the cold appetizers and some other stuff)
Some colorado rack of lamb that the sous chef gave to me towards the end of service. I order lamb chops all the time, its my favorite protein, and I thought I had eaten some really good lamb chops. I was wrong, this what they are supposed to taste like!!! Overall I think I was given 3 full plates of food to eat wednesday night and that doesnt include all the small samples that I came across here and there. I love my job and I havent even started yet!
edit2: heres the chef. The french vietnamese guy on the right {acronym Renton hates}.

I never had one until a few weeks ago at my brother in law's house. We play some cards maybe once a week and he made some in the microwave once and they were definitely the best i'd ever had. Another time we cooked them over the fire outside and those were even better. I really havn't liked hotdogs a whole lot until recently either but these definitely have opened my eyes. |

I am done with all of my planning and final making for the classes I teach. I have three more days with my kids (yes they have to come back on Tuesday after Memorial Day), and then I'm done. I have a few work-days after that but I'll be "really hard to find" on those days if you know what I mean.
I can't wait for Summer. I'm coaching a baseball team that should be pretty badass, playing some ball myself, working out a ton, playing lots of poker too (already started doing that so I'll just keep going)....

this is gonna be the most livin weekend of the year.
Friday: Carb day for the Indy 500 (for those who dont know is just a huge excuse to take off work and party all day. Stone Temple Pilots are doing a free concert at the track also. Oh, and theres some racing ans shit too, but who cares)
Saturday: Kegs and Eggs, golfing in the afternoon, huge party around the speedway all night.
Sunday: Wake up at 6:00 and start drinking and maybe watch the 500 if im still awake at noon.
Monday: cookout/more drinking.
by far my favorite weekend of the year. i may or may not still be alive tuesday. |
